Ingredients

1 medium head of cauliflower, cut into florets

1/2 cup heavy cream

1/4 cup unsalted butter

2 cloves garlic, minced

1/2 tsp salt (or to taste)

1/4 tsp black pepper (or to taste)

1/4 cup grated Parmesan cheese (optional)

Fresh chives, chopped (for garnish)

Instructions

Prepare the Cauliflower: Begin by bringing a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until they are very tender.

Sauté the Garlic: While the cauliflower is cooking, melt the butter in a small pan over medium heat. Add the minced garlic and sauté for about 1-2 minutes, just until it becomes fragrant and slightly golden. Be careful not to burn it.

Drain and Dry: Once the cauliflower is cooked, drain it well. You may want to return the cauliflower to the pot for a minute to let any excess moisture evaporate.

Blend the Mixture: In a food processor, combine the drained cauliflower and garlic-butter mixture. Add the heavy cream, salt, pepper, and grated Parmesan cheese (if using). Blend until the mixture is smooth and creamy. Taste and adjust seasoning if necessary.

Serve: Spoon the creamy cauliflower mash into a serving bowl. Garnish with fresh chopped chives for a pop of color and added flavor.

Enjoy: Serve immediately as a delicious, creamy side dish to complement your favorite main course!
