Ingredients
  

1 cup cottage cheese

1/2 cup cooked crab meat (lump or shredded)

1/4 cup diced cucumber

1/4 cup diced bell pepper (red or yellow for color)

1/4 cup cherry tomatoes, halved

2 tablespoons chopped fresh chives or green onions

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and black pepper to taste

1 tablespoon olive oil

Optional: avocado slices for garnish

Instructions
 

In a large mixing bowl, combine the cottage cheese and crab meat, stirring gently to incorporate.

    Add the diced cucumber, bell pepper, cherry tomatoes, and chopped chives, then mix until evenly distributed.

      In a small bowl, whisk together the lemon juice, Dijon mustard, olive oil, salt, and black pepper to create a dressing.

        Pour the dressing over the crab and cottage cheese mixture, gently folding to combine. Be careful not to break up the crab too much.

          Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice as desired.

            Spoon the mixture into serving bowls, and garnish with avocado slices and additional chives or green onions if desired.
