3 medium apples (preferably Granny Smith or Honeycrisp), peeled and diced

2 teaspoons lemon juice

2 cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

½ cup brown sugar

1 teaspoon ground nutmeg

½ cup chopped walnuts or pecans (optional)

¼ cup powdered sugar (for glaze)

1 tablespoon milk (for glaze)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Prepare the Apples: In a mixing bowl, toss the diced apples with lemon juice. This will prevent them from browning and enhance their flavor.

      Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking soda, baking powder, ground cinnamon, and salt until well combined.

        Combine Wet Ingredients: In a separate bowl, mix the melted butter, eggs, and vanilla extract until smooth and creamy.

          Combine Mixtures: Slowly add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; it’s okay if a few lumps remain.

            Add Apples & Nuts: Fold in the diced apples and chopped walnuts or pecans (if using). Make sure the apples are evenly distributed throughout the batter.

              Prepare the Swirl: In a small bowl, mix together the brown sugar and ground nutmeg. Reserve this mixture for layering in the bread.

                Layer the Batter: Pour half of the batter into the prepared loaf pan. Sprinkle half of the brown sugar-nutmeg mixture evenly over the top. Pour the remaining batter into the pan, followed by the rest of the brown sugar-nutmeg mixture on top.
