Ingredients

2 cups cottage cheese (low-fat or full-fat)

1 cup fresh strawberries, hulled and sliced

1 cup pineapple chunks (fresh or canned)

1 cup blueberries

1 ripe banana, sliced

1 tablespoon honey (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 tablespoon chia seeds (optional)

Fresh mint leaves for garnish

Instructions

Prepare the Base: In a large mixing bowl, add the cottage cheese. If you prefer a creamier texture, whisk it gently to smoothen it out.

Mix the Fruits: Add the sliced strawberries, pineapple chunks, blueberries, and banana slices to the bowl with the cottage cheese. Gently fold the fruits into the cottage cheese to combine, being careful not to mash the fruits.

Sweeten it Up: Drizzle the honey over the mixture. Add the vanilla extract and chia seeds (if using). Stir gently until everything is well mixed.

Chill and Serve: Refrigerate the salad for at least 15-30 minutes to allow the flavors to meld.

Garnish: Just before serving, garnish with fresh mint leaves for a pop of color and extra freshness.
