2 cups cottage cheese

1 large apple (preferably a sweet variety like Fuji or Honeycrisp), diced

1/2 cup chopped walnuts (or pecans)

1/4 cup dried cranberries

2 tablespoons honey

1 tablespoon lemon juice

1/2 teaspoon ground cinnamon

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

In a mixing bowl, combine the cottage cheese, diced apple, chopped walnuts, and dried cranberries. Gently fold the ingredients together to avoid breaking the apple pieces.

    In a small bowl, whisk together the honey, lemon juice, ground cinnamon, and a pinch of salt until well combined.

      Drizzle the honey mixture over the cottage cheese and apple mixture. Fold gently until all the ingredients are well coated in the dressing.

        Taste and adjust sweetness or lemon juice as desired, adding more honey or lemon to suit your preference.
