6 cups fresh peaches, peeled and sliced

1 cup granulated sugar, divided

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 tablespoon lemon juice

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup whole milk

1/2 cup unsalted butter, melted

1/4 teaspoon nutmeg (optional)

1 tablespoon cornstarch (for thickening, if needed)

Prepare the Peaches: In a large bowl, combine the sliced peaches, 1/2 cup sugar, cinnamon, vanilla extract, and lemon juice. Toss until well mixed. If the peaches are very juicy, sprinkle the cornstarch and toss again to coat evenly. Let sit for 30 minutes to allow the juices to combine.

    Preheat Oven: Preheat your oven to 375°F (190°C).

      Make the Dough: In another mixing bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup sugar. Gradually stir in the milk and melted butter until just combined; do not overmix. The batter will be somewhat lumpy, which is perfect!
