6 slices of thick bread (Texas toast or challah work great)

3 large eggs

1 cup milk (whole or almond for a dairy-free option)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup sugar

1/4 cup melted butter

1 teaspoon cinnamon (for topping)

1/4 cup powdered sugar (for optional dusting)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with non-stick spray or butter.

    Cut the thick bread into 1-inch cubes and place them in a large mixing bowl.

      In a separate bowl, whisk together the eggs, milk, vanilla extract, 1 teaspoon cinnamon, nutmeg, and salt until well combined.

        Pour the egg mixture over the bread cubes and gently toss to ensure the bread is thoroughly coated. Let it sit for about 10 minutes, allowing the bread to soak up the custard.

          In another small bowl, combine the sugar and 1 teaspoon of cinnamon. Set aside.

            Once the bread has soaked, divide the mixture evenly among the muffin cups, filling each about 3/4 full.

              Drizzle the melted butter over the top of each muffin cup and sprinkle generously with the cinnamon sugar mixture.

                Bake in the preheated oven for 20-25 minutes, or until the muffins are puffed and golden brown.

                  Once baked, let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
