Chinese Beef and Onion Stir-Fry

1 lb (450g) beef sirloin, thinly sliced against the grain

2 medium onions, thinly sliced

4 cloves garlic, minced

1 inch piece of ginger, minced

1 bell pepper (red or green), sliced

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 tablespoon sesame oil

1 teaspoon black pepper

1 teaspoon sugar

3 green onions, chopped (for garnish)

Cooked rice or noodles (for serving)

Instructions
 

Marinate the Beef: In a bowl, combine the sliced beef with soy sauce, oyster sauce, cornstarch, black pepper, and sugar. Mix well and let it marinate for at least 15 minutes for the flavors to meld.

    Prepare the Stir-Fry Sauce: In a small bowl, mix together an extra tablespoon of soy sauce, sesame oil, and a splash of water. Set aside.

      Heat the Oil: In a large wok or skillet, heat the vegetable oil over medium-high heat until shimmering.

        Cook the Beef: Add the marinated beef to the hot wok in a single layer, allowing it to sear without moving it for about 1 minute. Then stir-fry for another 2-3 minutes until the beef is browned but not fully cooked. Remove the beef from the wok and set aside.

          Sauté Vegetables: In the same wok, add the sliced onions, garlic, and ginger. Stir-fry for about 2-3 minutes until the onions become translucent.

            Add Bell Pepper: Add the sliced bell pepper to the wok and stir-fry for another 2 minutes until slightly softened.

              Combine Ingredients: Return the beef to the wok with the vegetables and pour in the stir-fry sauce. Stir well to coat everything and cook for an additional 2-3 minutes until the beef is cooked through and all ingredients are well combined.

                Garnish and Serve: Remove from heat, garnish with chopped green onions, and serve hot over cooked rice or noodles.
