1 pound ground chicken

3/4 cup fresh spinach, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup breadcrumbs

1 garlic clove, minced

1 teaspoon dried oregano

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

1 tablespoon fresh lemon juice

Natural sausage casings (optional)

Prepare the Ingredients: If using natural sausage casings, soak them in water for about 30 minutes and rinse thoroughly.

    Mix the Filling: In a large mixing bowl, combine the ground chicken, chopped spinach, feta cheese, breadcrumbs, minced garlic, oregano, paprika, salt, and black pepper. Mix until well blended.

      Assemble the Sausages: If using casings, gently stuff the mixture into the casings, being careful not to overstuff. If not using casings, you can form the mixture into patties or logs.

        Chill: Place the stuffed sausages (or patties) on a lined tray and refrigerate for at least 30 minutes to help them firm up.

          Cook the Sausages: Heat olive oil in a large skillet over medium heat. Add the sausages and cook until golden brown and cooked through, about 5-7 minutes per side. If using casings, ensure they are fully cooked inside (internal temperature should reach 165°F).

            Drizzle and Serve: Once cooked, remove the sausages from the skillet, drizzle with fresh lemon juice, and let rest for a few minutes before serving.
