Chicken Ramen Stir Fry (30 minutes)

2 packs of instant ramen noodles (discard seasoning packets)

1 lb boneless, skinless chicken breast, thinly sliced

2 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp sesame oil

1 tbsp vegetable oil

1 bell pepper, sliced (any color)

1 medium carrot, julienned

1 cup broccoli florets

3 green onions, chopped (reserve some for garnish)

2 cloves garlic, minced

1-inch piece of ginger, grated

1 tsp chili paste (optional)

Sesame seeds for garnish

Prep the Noodles: In a large pot, boil water and cook the ramen noodles according to package instructions, usually about 3 minutes. Drain and set aside.

    Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken breast and cook for 5-7 minutes until browned and cooked through. Remove the chicken from the pan and set aside.

      Stir Fry the Vegetables: In the same skillet, add the sesame oil and a bit more vegetable oil if needed. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.

        Add Veggies: Add in the sliced bell pepper, julienned carrot, and broccoli florets. Stir fry for around 3-4 minutes or until the vegetables are bright and slightly tender but still crisp.

          Combine and Flavor: Return the cooked chicken to the skillet, then add the drained ramen noodles. Pour in soy sauce, oyster sauce, and chili paste (if using). Toss everything together until well combined and heated through, about 2-3 minutes.

            Garnish and Serve: Remove from heat and top with chopped green onions and sesame seeds. Serve hot!
