Chicken Chow Mein with The Best Chow Mein Sauce

For the Chicken Chow Mein:

2 cups cooked chow mein noodles

1 lb boneless, skinless chicken breast, sliced thin

2 tablespoons vegetable oil

2 cups mixed vegetables (e.g., bell peppers, carrots, snap peas)

2 cloves garlic, minced

1 small onion, sliced

2 green onions, chopped

Salt and pepper, to taste

For the Chow Mein Sauce:

4 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water

1 tablespoon sugar

1/2 teaspoon ground ginger

1/2 teaspoon white pepper

Instructions
 

Marinate the Chicken:

    In a bowl, combine the sliced chicken with 1 tablespoon soy sauce and a sprinkle of salt and pepper. Let it marinate for about 15-20 minutes.

      Prepare the Sauce:

        In another bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, cornstarch slurry, sugar, ginger, and white pepper. Set aside.

          Cook the Chicken:

            Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes, or until it's cooked through and lightly browned. Remove the chicken from the pan and set aside.

              Stir-Fry the Vegetables:

                In the same pan, add the remaining tablespoon of oil. Toss in the minced garlic and sliced onion, stir-frying for about 1 minute until fragrant. Add the mixed vegetables and continue stir-frying for an additional 3-4 minutes until the veggies are tender-crisp.

                  Combine Ingredients:

                    Return the cooked chicken to the pan with the vegetables. Add the cooked chow mein noodles and pour in the chow mein sauce. Toss everything together gently, ensuring the noodles are evenly coated and heated through.

                      Final Touch:

                        Add chopped green onions and give it a final toss. Taste and adjust seasoning if needed.
