Cheesy Masala Beans on Toast

1 can (400g) of kidney beans, drained and rinsed

1 cup of diced tomatoes (fresh or canned)

1 medium onion, finely chopped

2 cloves of garlic, minced

1 green bell pepper, diced

1 tablespoon of olive oil

1 teaspoon of cumin powder

1 teaspoon of garam masala

1/2 teaspoon of chili powder (adjust to taste)

Salt and pepper, to taste

1 cup of shredded cheese (cheddar or mozzarella)

4 slices of whole grain or sourdough bread

Fresh coriander or parsley, for garnish

Instructions
 

Prepare the base: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add garlic and bell pepper: Stir in the minced garlic and diced green bell pepper. Cook for another 3-4 minutes until the peppers soften.

      Mix in the spices: Add the cumin powder, garam masala, chili powder, and season with salt and pepper. Stir well to combine and let the spices bloom for a minute.

        Add the beans and tomatoes: Toss in the kidney beans and diced tomatoes. Mix everything well and let it simmer for about 8-10 minutes until the mixture thickens slightly.

          Cheesy goodness: Lower the heat and fold in half of the shredded cheese until melted and creamy. Adjust seasoning if necessary.

            Toast the bread: While the beans are simmering, toast the bread slices until golden brown.

              Assemble: Place the toasted bread on plates and generously spoon the cheesy masala beans over each slice.

                Finishing touches: Sprinkle the remaining cheese on top and place under a broiler for 2-3 minutes, just until the cheese is bubbly and slightly browned.

                  Garnish and serve: Remove from heat, garnish with fresh coriander or parsley, and serve immediately.
