Cheesy Beef Enchilada Tortellini

12 oz cheese tortellini

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) enchilada sauce

1 cup diced tomatoes (fresh or canned)

1 ½ cups shredded cheddar cheese

1 tsp chili powder

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

Fresh cilantro, for garnish

Sour cream, for serving

Instructions
 

Cook Tortellini: In a large pot, bring salted water to boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onion and sauté until translucent (about 3-4 minutes). Stir in the minced garlic and cook for another minute.

      Add Ground Beef: Increase heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon. Drain any excess fat.

        Mix in Spices: Once the beef is browned, stir in the chili powder, cumin, paprika, salt, and pepper. Mix well until the spices are evenly distributed.

          Combine with Sauce: Pour in the enchilada sauce and diced tomatoes, stirring until everything is evenly coated. Let it simmer for about 5 minutes.

            Add Tortellini: Gently fold the cooked tortellini into the beef and sauce mixture, stirring carefully to combine without breaking the tortellini.

              Cheese It Up: Preheat your oven to 350°F (175°C). Transfer the entire mixture to a baking dish and top evenly with the shredded cheddar cheese.

                Bake: Place the baking dish in the preheated oven and bake for 20 minutes or until the cheese is melted and bubbly.

                  Garnish and Serve: Once out of the oven, garnish with fresh cilantro. Serve hot with a dollop of sour cream on top.
