Cheesy Beef Burritos with Crispy Fries

For the Burritos:

1 lb ground beef

1 cup cooked rice

1 cup black beans, drained and rinsed

2 cups shredded cheddar cheese

1 cup salsa

1 tsp cumin

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

4 large flour tortillas

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

For the Crispy Fries:

4 large russet potatoes, cut into fries

2 tbsp olive oil

1 tsp paprika

1 tsp garlic powder

Salt and pepper to taste

Optional: grated Parmesan cheese and fresh parsley for topping

Prepare the Fries: Preheat your oven to 425°F (220°C). Toss the cut fries in a large bowl with olive oil, paprika, garlic powder, salt, and pepper. Spread the fries evenly on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until golden brown and crispy. If desired, sprinkle with grated Parmesan cheese and chopped parsley during the last few minutes of baking.

    Cook the Beef Filling: While the fries are baking, heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if needed.

      Season the Beef: To the skillet with the beef, stir in the cumin, garlic powder, onion powder, salt, and pepper. Add the cooked rice, black beans, and salsa. Mix well and cook for an additional 5-7 minutes until heated through. Remove from heat and stir in 1 cup of cheddar cheese until melted.

        Assemble the Burritos: Place a generous scoop of the beef mixture in the center of each flour tortilla. Fold the sides of the tortilla over the filling, then roll from the bottom up to form a tight burrito. Repeat with all tortillas.
