6 medium russet potatoes, peeled and cubed

8 slices of thick-cut bacon, chopped

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 small onion, diced

4 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or butter.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and let it drain on paper towels. Leave about 1 tablespoon of bacon fat in the skillet.

      Sauté the Onion: In the same skillet, add the diced onion to the bacon fat and sauté until soft and translucent, about 5 minutes. Set aside.

        Boil the Potatoes: In a large pot, bring salted water to a boil and add the cubed potatoes. Cook for about 10 minutes, or until just tender. Drain and let cool slightly.

          Whisk Together Egg Mixture: In a mixing bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper until well combined.

            Combine Ingredients: In a large mixing bowl, combine the cooked potatoes, sautéed onions, crispy bacon, cheddar cheese, and mozzarella cheese. Pour the egg mixture over and gently mix until everything is evenly coated.

              Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it out evenly.

                Bake: Bake in the preheated oven for 35-40 minutes or until the casserole is set in the center and the top is golden brown.

                  Garnish and Serve: Remove from the oven, let cool for a few minutes, then garnish with paprika and fresh parsley. Cut into squares and serve warm.
