The foundation of any cheeseburger is quality ground beef. For cheeseburger pockets, it’s essential to choose a cut that balances flavor and texture. Ground chuck, which typically has a fat content of around 80/20, is a popular choice as it provides a good amount of juiciness without being overly greasy. If you prefer a leaner option, ground sirloin can also work, though you may need to add a bit more fat to keep the filling moist.

Ingredients

1 lb ground beef

1/2 cup yellow onion, finely chopped

1 cup cheddar cheese, shredded

1/2 cup dill pickles, finely chopped

1 tablespoon mustard

1 tablespoon ketchup

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 can (8 oz) refrigerated crescent roll dough

1 egg (for egg wash)

Sesame seeds (optional, for topping)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Cook the Ground Beef: In a large skillet over medium heat, add the ground beef and onion. Cook until the beef is browned and the onion is soft, about 5-7 minutes. Drain any excess fat.

Mix Ingredients: In a mixing bowl, combine the cooked beef and onion mixture with cheddar cheese, dill pickles, mustard, ketchup, garlic powder, paprika, salt, and pepper. Stir until everything is well blended.

Prepare Crescent Roll Dough: Unroll the crescent roll dough and separate it into triangles as indicated on the package.

Assemble the Pockets: Place a generous spoonful of the beef mixture at the wide end of each triangle. Fold the sides in over the filling and roll up towards the point. Pinch the seams to seal the pockets tightly.

Apply Egg Wash: In a small bowl, beat the egg and brush the top of each pocket with the egg wash. Sprinkle with sesame seeds if desired.

Bake: Place the pockets on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until golden brown.

Serve: Let the cheeseburger pockets cool for a few minutes before serving. Enjoy them warm with extra ketchup or mustard on the side if desired.

Prep Time: 15 minutes | Total Time: 35 minutes | Servings: 8 pockets
