Ingredients
  

1 cup rolled oats

2 cups milk (or almond milk)

1 medium carrot, grated

1/2 banana, mashed

1/4 cup shredded coconut

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1 tablespoon maple syrup (adjust to taste)

1/4 cup raisins or chopped walnuts (optional)

1 tablespoon cream cheese (optional, for topping)

Chopped walnuts and/or shredded coconut for garnish

Instructions
 

In a medium saucepan, combine the rolled oats and milk. Bring to a gentle boil over medium heat.

    Once boiling, reduce heat to low and stir in the grated carrot, mashed banana, shredded coconut, cinnamon, nutmeg, and maple syrup. Mix well to combine.

      Continue to cook for 5-7 minutes, stirring occasionally, until the oats have absorbed most of the liquid and the mixture is creamy.

        If you'd like to add raisins or walnuts, stir them in just before the oatmeal is finished cooking to warm them through.

          Remove from heat and let the oatmeal sit for a minute to thicken.

            Serve hot in bowls. If using, add a dollop of cream cheese on top and garnish with additional chopped walnuts or shredded coconut for an extra touch.
