Ingredients
  

2 large carrots, grated

1 large apple (such as Granny Smith or Honeycrisp), cored and diced

1/4 cup raisins or dried cranberries

1/4 cup pecans or walnuts, chopped (optional)

1/4 cup Greek yogurt (or vegan alternative)

1 tablespoon honey or maple syrup

1 tablespoon lemon juice

1/2 teaspoon ground cinnamon

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Instructions
 

In a large bowl, combine the grated carrots, diced apple, raisins or dried cranberries, and chopped nuts.

    In a separate small bowl, whisk together the Greek yogurt, honey or maple syrup, lemon juice, ground cinnamon, salt, and pepper until well blended.

      Pour the dressing over the carrot and apple mixture. Toss everything together gently until the salad is evenly coated with the dressing.

        Taste and adjust seasoning, adding more salt or honey according to your preference.

          Cover the salad and let it chill in the refrigerator for about 20-30 minutes to allow the flavors to meld.

            Serve topped with fresh mint leaves for a refreshing touch.
