Caramel Apple Oatmeal Bake

2 cups rolled oats

2 cups almond milk (or milk of choice)

2 large apples, diced (preferably Granny Smith for tartness)

1/2 cup brown sugar

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1 teaspoon vanilla extract

1/4 cup unsalted butter, melted

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped pecans or walnuts (optional)

1/4 cup caramel sauce (store-bought or homemade)

Extra apple slices and caramel for topping (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

    In a large mixing bowl, combine the rolled oats, almond milk, diced apples, brown sugar, cinnamon, nutmeg, vanilla extract, melted butter, baking powder, and salt. Stir until all the ingredients are well combined.

      If using, fold in the chopped nuts for added crunch.

        Pour the oatmeal mixture into the prepared baking dish, spreading it evenly.

          Drizzle the top with caramel sauce, swirling it through the mixture for that delightful caramel flavor.

            Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the apples are tender.

              Remove from the oven and let it cool slightly. For serving, cut into squares and optionally top with extra apple slices and drizzle with more caramel sauce.
