12 oz bow tie pasta

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1/2 cup bell peppers (red and yellow), diced

1/2 cup red onion, finely chopped

1 cup mozzarella balls, halved

1/4 cup black olives, sliced

1/4 cup fresh basil, chopped

1/2 cup feta cheese, crumbled (optional)

1/2 cup olive oil

3 tbsp balsamic vinegar

1 tsp garlic powder

1 tsp Italian seasoning

Salt and pepper to taste

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the bow tie pasta and cook according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Veggies: While the pasta is cooling, chop and prepare all the vegetables (cherry tomatoes, spinach, bell peppers, red onion, black olives, and basil) and place them in a large mixing bowl.

      Mix the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, Italian seasoning, salt, and pepper until well combined.

        Combine Ingredients: Once the pasta has cooled, add it to the bowl with the chopped vegetables. Pour the dressing over the pasta and veggies, tossing gently to combine.

          Add Cheese: Gently fold in the mozzarella balls and feta cheese (if using). Make sure everything is evenly coated in the dressing.
