2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 large egg

½ cup unsalted butter, melted

1 cup buttermilk

2 teaspoons vanilla extract

1 ½ cups fresh blueberries (or frozen, if out of season)

1 tablespoon lemon zest

½ teaspoon cinnamon (optional)

Additional sugar for sprinkling

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease with cooking spray.

    In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon (if using) until well combined.

      In a separate bowl, beat the egg, then add the melted butter, buttermilk, vanilla extract, and lemon zest. Mix well until fully combined.

        Pour the wet ingredients into the dry ingredients. Stir gently until just combined; the batter should be lumpy. Do not overmix to keep muffins tender.

          Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.

            Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle a small amount of sugar on top of each muffin for a sweet crunch.

              Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

                Remove from the oven and let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
