4 salmon fillets (6 oz each)

2 tablespoons paprika

1 teaspoon cayenne pepper

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and black pepper, to taste

3 tablespoons olive oil

1 tablespoon butter

For the Creamy Dijon Sauce:

1/2 cup sour cream

2 tablespoons Dijon mustard

1 tablespoon honey

1 tablespoon fresh lemon juice

Salt and black pepper, to taste

1 tablespoon fresh chives, chopped (for garnish)

Prepare the Spice Blend: In a small bowl, combine the paprika, cayenne pepper, onion powder, garlic powder, dried thyme, dried oregano, salt, and black pepper. Mix well to create a spice rub.

    Season the Salmon: Pat the salmon fillets dry with paper towels. Rub each fillet evenly with the spice blend on all sides, pressing gently to adhere the spices.

      Heat the Skillet: In a large cast-iron skillet, heat the olive oil and butter over medium-high heat until shimmering.
