Ingredients
  

1 cup rice flour

1 cup coconut milk

1/2 cup sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

2 large eggs

1/4 cup grated coconut (fresh or desiccated)

1/2 cup sliced cheese (edam or queso de bola)

Banana leaves for lining the pans (optional)

Butter, for greasing and brushing on top

Sweetened grated coconut and salted duck eggs for topping (optional)

Instructions
 

Prepare the Oven: Preheat your oven to 375°F (190°C). If using banana leaves, rinse them and briefly pass them over an open flame to soften them. Line the bottom and sides of small cake pans or muffin tins with banana leaves.

    Mix the Batter: In a large mixing bowl, combine rice flour, sugar, baking powder, and salt. Mix well. In a separate bowl, whisk together the coconut milk and eggs until smooth. Gradually pour the wet ingredients into the dry mixture, stirring until you obtain a smooth batter.

      Add Coconut: Fold in the grated coconut gently, ensuring it is evenly distributed throughout the batter.

        Pour and Top: Pour the batter into the prepared pans, filling each one about 3/4 full. Top each with slices of cheese and a sprinkle of additional grated coconut if desired.

          Bake: Place the pans in the preheated oven and bake for approximately 25-30 minutes, or until the bibingka is puffed and a toothpick inserted into the center comes out clean.

            Brush with Butter: Once out of the oven, immediately brush the tops with melted butter and let them cool slightly.

              Serve Warm: If using, top with sweetened grated coconut and slices of salted duck eggs for an extra delicious touch. Serve warm and enjoy the delightful flavors of this traditional Filipino treat!
