Ingredients

4 cups fresh blackberries (washed and stems removed)

1 ½ cups granulated sugar

1 tablespoon lemon juice (freshly squeezed)

1 packet (1.75 oz) fruit pectin (Powdered)

¼ teaspoon salt

Instructions

Prepare the Berries: In a large mixing bowl, mash the blackberries with a potato masher or fork until you reach your desired level of chunkiness. Leave some whole for texture if you like!

Combine Ingredients: In a large saucepan, combine the mashed blackberries, sugar, lemon juice, salt, and fruit pectin. Stir well to mix.

Cook the Jam: Place the saucepan over medium heat. Stir continuously until the mixture comes to a full rolling boil (a boil that doesn't stop when stirred). This should take about 10 minutes.

Test for Doneness: After boiling for 1 minute, perform the plate test: place a small amount of the jam on a cold plate and let it sit for a minute. If it wrinkles when pushed with a finger, it’s ready to jar. If not, boil for an additional minute and test again.

Jar the Jam: Once the jam has set, pour it into sterilized canning jars, leaving about 1/4 inch of headspace at the top. Wipe the rims clean with a cloth and seal with lids.

Process for Preservation: If you wish to can the jam for longer storage, process the jars in a boiling water bath for 10 minutes. Remove and let cool completely.

Store and Enjoy: Once cooled, check the seals on the jars. Store any unsealed jars in the refrigerator and consume first. Properly sealed jams can be stored in a cool, dark place.

Prep Time: 15 mins | Total Time: 30 mins | Servings: about 4 cups
