1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons oyster sauce

1 tablespoon soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 red bell pepper, julienned

1 cup sugar snap peas, trimmed

3 cloves garlic, minced

1-inch piece ginger, grated

1/2 cup beef broth

2 green onions, sliced (for garnish)

Salt and pepper to taste

Steamed rice, for serving

Marinate the Beef: In a bowl, combine the sliced beef, oyster sauce, soy sauce, and cornstarch. Mix well to coat the beef evenly. Allow it to marinate for at least 20 minutes while you prepare the other ingredients.

    Prepare the Vegetables: While the beef is marinating, wash and slice the red bell pepper and trim the sugar snap peas. Set aside.

      Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat.

        Cook the Beef: Once the oil is hot, add the marinated beef in a single layer. Sear for about 2-3 minutes until browned. Stir occasionally to cook evenly. Remove the beef from the skillet and set it aside.

          Sauté Aromatics: In the same skillet, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.

            Add the Veggies: Add the red bell pepper and sugar snap peas to the skillet. Stir-fry for 3-4 minutes until they are vibrant in color and slightly tender.

              Combine Ingredients: Return the cooked beef to the skillet. Pour in the beef broth, and stir everything together. Let it simmer for another 2-3 minutes until the sauce thickens slightly. Season with salt and pepper to taste.
