2 cups cooked chicken, shredded

1 cup BBQ sauce (your choice)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1/2 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

Optional: sour cream and extra BBQ sauce for serving

Prepare Chicken Mixture: In a mixing bowl, combine the shredded chicken and BBQ sauce, stirring until the chicken is well-coated. Set aside.

    Sauté Onions: In a skillet over medium heat, add 1 tablespoon of olive oil. Add the sliced red onions and sauté for about 3-4 minutes until they are softened and slightly caramelized. Remove from the skillet and set aside.

      Assemble Quesadilla: Lay one tortilla flat on a clean surface. On one half of the tortilla, spread a generous layer of the BBQ chicken mixture, followed by a sprinkle of the cheddar and mozzarella cheeses, some sautéed onions, and chopped cilantro. Fold the other half of the tortilla over the filling.

        Cook Quesadilla: In the same skillet (add remaining olive oil if needed), heat over medium-low heat. Carefully place the folded quesadilla into the skillet and cook for about 3-4 minutes on one side until golden brown and crispy. Flip and cook the other side for an additional 3-4 minutes until the cheese is melted and the tortilla is crispy.

          Repeat: Repeat the assembly and cooking process for the remaining tortillas and filling.

            Serve: Cut the quesadillas into wedges and serve hot with sour cream and extra BBQ sauce on the side for dipping.
