BBQ Chicken Grilled Cheese

Satisfy your cravings with this BBQ Chicken Grilled Cheese Delight! This scrumptious sandwich combines shredding chicken coated in your favorite BBQ sauce, melty cheddar and mozzarella cheeses, and crispy sourdough bread. Perfect for a quick lunch or dinner, this comfort food is ready in just 30 minutes. Optional toppings like red onions and cilantro add a fresh twist. Serve it up with extra BBQ sauce for dipping and enjoy every gooey bite!

Ingredients
  

2 cups cooked chicken, shredded

1/2 cup BBQ sauce (your favorite brand)

4 slices of sourdough bread

1 cup shredded cheddar cheese

1/2 cup mozzarella cheese

4 tablespoons unsalted butter, softened

1/4 cup thinly sliced red onions (optional)

1/4 cup chopped fresh cilantro (optional)

Salt and pepper to taste

Instructions
 

In a mixing bowl, combine the shredded chicken with BBQ sauce. Stir well until fully coated. Add salt and pepper to taste.

    Heat a skillet over medium heat. While it heats, butter one side of each slice of sourdough bread.

      Place two slices of the bread, buttered side down, in the heated skillet.

        Evenly distribute half of the cheddar and mozzarella cheese over the bread in the pan.

          Spoon the BBQ chicken mixture on top of the cheese layer, spreading it evenly.

            Sprinkle the remaining cheddar and mozzarella cheese over the chicken, then top with the remaining slices of bread, buttered side up.

              Cook on medium heat for about 4-5 minutes until the bottom slice of bread is golden brown and crispy. Carefully flip the sandwiches using a spatula.

                Cook for an additional 4-5 minutes on the other side, or until it’s golden brown and the cheese has melted.

                  When done, remove from the skillet and let cool for a minute. If desired, top with sliced red onions and chopped cilantro for extra flavor.

                    Cut in half and serve with extra BBQ sauce for dipping!
