1 cup pearl barley

4 cups water or vegetable broth

1 cup milk (dairy or plant-based)

1 tablespoon maple syrup or honey (optional)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

Toppings: fresh fruits (like berries or sliced bananas), nuts (such as almonds or walnuts), nut butter, or a sprinkle of chia seeds

Instructions
 

Rinse the pearl barley under cold water in a fine-mesh strainer.

    In a large pot, bring 4 cups of water or vegetable broth to a boil. Add the rinsed barley and salt.

      Reduce the heat to low, cover the pot, and let the barley simmer for about 30-40 minutes, or until tender.

        Once the barley is cooked, add the milk, maple syrup or honey (if using), vanilla extract, and cinnamon. Stir to combine.

          Cook on low heat for an additional 5-10 minutes, stirring occasionally, until the porridge reaches your desired creaminess. If it’s too thick, you can add more milk or water to loosen it up.

            Remove from heat, and let it sit for a couple of minutes to cool slightly.
