1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust for spice level)

1 tsp lime juice

For the Bowl:

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup chopped cucumbers

1 avocado, sliced

Fresh cilantro for garnish

Lime wedges for serving

Marinate the Chicken: In a bowl, combine chicken thighs and buttermilk. Cover and marinate for at least 1 hour, or overnight for best results.

    Prepare the Coating: In a separate large bowl, mix together the flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.

      Bread the Chicken: Remove chicken from the buttermilk and allow excess to drip off. Dredge each piece in the flour mixture, ensuring full coverage. Shake off any excess.
