Instructions

Make the Homemade Banana Bread:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, mash the bananas and mix in the melted butter.

        - Add the baking soda and salt, then stir in the sugar, egg, and vanilla extract.

          - Mix in the flour and optional cinnamon and nuts until just combined.

            - Pour the batter into a greased loaf pan and bake for 60-65 minutes, or until a toothpick comes out clean. Let cool before slicing.

              Prepare the Bananas Foster Topping:

                - In a skillet over medium heat, melt the butter. Stir in the brown sugar, cinnamon, and a pinch of salt.

                  - Add the sliced bananas and cook for about 2-3 minutes, gently tossing to coat.

                    - If using, carefully add the dark rum and ignite to flambé (optional), allowing the alcohol to burn off. Otherwise, simply stir in the vanilla extract and remove from heat.

                      Make the French Toast:

                        - In a bowl, whisk together the eggs, milk, vanilla extract, and a pinch of salt.

                          - Heat a skillet or griddle over medium heat and add a bit of butter or oil.

                            - Dip each slice of cooled banana bread into the egg mixture, allowing it to soak slightly on each side.

                              - Cook the soaked banana bread slices for about 3-4 minutes on each side until golden brown.

                                Assemble the Dish:

                                  - Place the French toast on plates and generously spoon the bananas foster mixture on top.

                                    - Serve warm with a drizzle of syrup or a dusting of powdered sugar if desired.
