Banana Blueberry Oatmeal Breakfast Cookies

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond flour (or any preferred flour)

1/2 cup fresh blueberries (or frozen, thawed)

1/4 cup honey or maple syrup

1/4 cup almond butter (or peanut butter)

1/2 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

Optional: 1/4 cup chopped nuts or seeds (e.g., walnuts, chia seeds)

Instructions
 

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the mashed bananas, honey (or maple syrup), almond butter, and vanilla extract. Stir until well combined.

      In another bowl, mix together the rolled oats, almond flour, baking powder, cinnamon, and salt.

        Gradually add the dry ingredients into the wet mixture, stirring until just combined.

          Gently fold in the blueberries and any optional nuts or seeds until evenly distributed throughout the dough.

            Using a spoon or cookie scoop, drop tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Flatten each cookie slightly with the back of the spoon for even baking.

                Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.

                  Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
