Ingredients
  

200g pasta (penne or fusilli works great)

200g block of feta cheese

2 cups cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup olive oil

1 teaspoon dried oregano

1 teaspoon chili flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a large baking dish, combine the halved cherry tomatoes, minced garlic, olive oil, dried oregano, chili flakes, salt, and pepper. Mix well.

      Add the Feta: Place the block of feta cheese in the center of the baking dish amongst the tomatoes.

        Bake: Bake in the preheated oven for about 30 minutes, or until the feta is golden and the tomatoes are blistered.

          Cook the Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.

            Combine: Remove the baked feta and tomatoes from the oven. Using a fork, mash the feta and mix it with the roasted tomatoes, creating a creamy sauce.

              Mix it All Together: Add the cooked pasta to the baking dish and toss to combine, adding reserved pasta water a little at a time until you reach your desired consistency.

                Serve: Garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese, if desired. Serve hot and enjoy your Baked Feta Pasta!
