2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1 yellow bell pepper, diced

1 cucumber, peeled and chopped

1 cup corn (fresh, grilled or canned)

1/4 cup feta cheese, crumbled

1/4 cup fresh cilantro, chopped

1 lime, juiced

3 tablespoons olive oil

1 teaspoon honey (or agave syrup for a vegan option)

Salt and pepper to taste

Optional: 1 jalapeño, diced for heat

Instructions
 

Start by preparing all your ingredients. Dice the avocados, halve the cherry tomatoes, and thinly slice the red onion. Dice the yellow bell pepper and chop the cucumber. If you're using fresh corn, grill it until tender and cut the kernels off the cob.

    In a large mixing bowl, combine the diced avocados, halved cherry tomatoes, sliced red onion, diced yellow bell pepper, chopped cucumber, and corn.

      Add the crumbled feta cheese (if using) and chopped cilantro to the bowl.

        In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined to create the dressing.

          Pour the dressing over the salad mixture and gently toss all the ingredients until evenly coated. Be careful not to mash the avocados.

            Taste the salad and adjust seasoning with additional salt, pepper, or lime juice if desired.

              If you like a little heat, add the diced jalapeño and toss again.

                Serve immediately for the best texture, or chill in the refrigerator for 15-20 minutes to let the flavors meld together.
