2 cups all-purpose flour

1/2 cup water (adjust as needed)

1/2 pound ground pork (or chicken)

1/4 cup finely chopped scallions

2 tablespoons soy sauce

1 tablespoon ginger, minced

1 tablespoon garlic, minced

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (adjust for spice preference)

4 cups chicken broth

1 cup water

1 tablespoon miso paste (optional)

Salt and black pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Optional: chili oil for extra heat

Make the Dumpling Dough: In a mixing bowl, combine the all-purpose flour and water. Knead until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling: In a large bowl, mix the ground pork, chopped scallions, soy sauce, ginger, garlic, sesame oil, red pepper flakes, and a pinch of salt and black pepper until well combined.

      Form the Dumplings: Divide the rested dough into small balls (about the size of a golf ball). Roll each ball into thin discs. Place about one tablespoon of filling in the center of each disc. Fold the dough over and pinch to seal, ensuring there are no air pockets. Repeat until all dough and filling are used.

        Make the Soup Base: In a large pot, bring the chicken broth and water to a boil. If using miso paste, stir it into the broth until dissolved. Add salt and black pepper to taste.

          Cook the Dumplings: Once the broth is boiling, carefully drop the dumplings into the pot. Allow them to cook for about 5-7 minutes or until they float to the surface and are cooked through.
