2 lbs chicken pieces (bone-in, skinless preferably thighs and legs)

2 tablespoons Jamaican curry powder

1 teaspoon allspice (pimento)

1/2 teaspoon cayenne pepper (optional for extra heat)

1 large onion, chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

2-3 scallions (green onions), chopped

1-2 Scotch bonnet peppers, halved (adjust to taste)

2 medium carrots, sliced

1 can (14 oz) coconut milk

2 cups chicken broth

2 tablespoons vegetable oil

Salt and black pepper, to taste

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken pieces with Jamaican curry powder, allspice, cayenne pepper (if using), salt, and black pepper. Mix well to coat the chicken thoroughly. Cover and let marinate for at least 1 hour, or preferably overnight in the refrigerator for deeper flavor.

    Prepare the Base: Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Then add the minced garlic, grated ginger, and chopped scallions. Cook for an additional 2 minutes until fragrant.

      Brown the Chicken: Add the marinated chicken to the pot in a single layer. Brown the chicken on all sides for about 5-7 minutes, turning occasionally to ensure even browning.

        Add Vegetables and Liquids: Once the chicken is browned, add the sliced carrots and Scotch bonnet peppers. Pour in the coconut milk and chicken broth, stirring to combine. Bring the mixture to a gentle simmer.

          Simmer the Dish: Reduce the heat to low, cover the pot, and allow the curry to simmer for 30-40 minutes, or until the chicken is tender and cooked through. Stir occasionally, and feel free to add more broth if the sauce gets too thick.

            Adjust Seasoning: Taste the curry and adjust salt, pepper, and additional spices according to your preference. Remove Scotch bonnet peppers if you prefer less heat.
