Asado Chicken and Sauteed Lemon Zucchini

For the Asado Chicken:

4 boneless chicken thighs

3 cloves garlic, minced

1/4 cup orange juice

1/4 cup soy sauce

2 tablespoons Worcestershire sauce

1 tablespoon olive oil

1 tablespoon brown sugar

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

Fresh cilantro for garnish (optional)

For the Sauteed Lemon Zucchini:

2 medium zucchinis, sliced into thin rounds

1 tablespoon olive oil

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1/2 lemon

Salt and pepper to taste

Fresh parsley for garnish (optional)

Marinate the Chicken: In a large bowl, mix garlic, orange juice, soy sauce, Worcestershire sauce, olive oil, brown sugar, cumin, smoked paprika, pepper, and salt. Add chicken thighs, coating them well. Cover and marinate in the fridge for at least 1 hour (or overnight for deeper flavor).

    Cook the Chicken: Preheat your grill or oven to 400°F (200°C). If grilling, cook chicken thighs for about 5-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C). If baking, place marinated chicken on a baking sheet and bake for 20-25 minutes.

      Prepare the Zucchini: While the chicken cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

        Sauté Zucchini: Add zucchini rounds to the skillet, sautéing for about 5-7 minutes until tender. Stir in lemon zest and juice, then season with salt and pepper to taste. Cook for an additional 2 minutes.

          Serve: Plate the Asado chicken garnished with fresh cilantro, and serve alongside the sautéed lemon zucchini garnished with parsley. Enjoy your delightful meal!
