4 cups all-purpose flour

1 ½ teaspoons salt

1 tablespoon sugar

2 teaspoons instant yeast

1 ½ cups warm water (110°F/43°C)

2 tablespoons olive oil

Extra flour for dusting

In a large mixing bowl, combine the flour, salt, sugar, and instant yeast. Mix these dry ingredients well to ensure even distribution.

    Gradually add the warm water to the dry mixture while stirring. Continue mixing until a shaggy dough begins to form.

      Add the olive oil to the dough and knead for about 10 minutes on a lightly floured surface, until the dough is smooth and elastic. You can add more flour if the dough is too sticky.

        Shape the kneaded dough into a ball and place it in a lightly oiled bowl, covering it with a clean kitchen towel. Let it rise in a warm place for about 1 hour or until it has doubled in size.

          Once the dough has risen, punch it down gently to release the air. Divide the dough into 10 equal pieces and shape each piece into a ball.

            Roll each ball into a flat, round circle about ¼ inch thick, dusting with extra flour to prevent sticking.

              Preheat a non-stick skillet or a griddle over medium-high heat. Cook each dough circle for about 2-3 minutes on one side, until puffed and lightly golden, then flip and cook the other side for another 1-2 minutes.

                Remove the cooked dough pockets from the skillet and keep warm by wrapping them in a clean towel. Repeat with the remaining dough.

                  Serve warm with your favorite fillings, dips, or use them as a side for your favorite dishes.
