Ingredients

2 medium-sized apples (such as Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/4 cup granulated sugar

1 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

1 large egg

1/2 cup milk

1 tsp vanilla extract

Oil for frying (canola or vegetable oil)

Powdered sugar for dusting (optional)

Instructions

Prepare the Apples: Peel, core, and dice the apples into small pieces. Pat them dry with a paper towel to remove excess moisture.

Mix Dry Ingredients: In a mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, beat the egg, then add the milk and vanilla extract. Mix until well-combined.

Form the Batter: Pour the wet mixture into the dry ingredients and stir until just combined. Gently fold in the diced apples until evenly distributed.

Heat the Oil: In a deep skillet or pot, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C). You can test it by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

Fry the Fritter Bites: Using a spoon or small cookie scoop, carefully drop small amounts of the batter into the hot oil. Fry for about 2-3 minutes on each side or until golden brown and cooked through. Do not overcrowd the pan.

Drain and Cool: Once fried, use a slotted spoon to remove the fritter bites from the oil and place them on a plate lined with paper towels to absorb excess oil.

Dust with Sugar: While they are still warm, dust the fritter bites with powdered sugar for an extra sweet touch.

Serve and Enjoy: Allow the bites to cool slightly, then serve warm. These bite-sized treats are perfect as a breakfast delight or a sweet afternoon snack!
