Apple Cider Braised Pork Shoulder

This dish features a tender, juicy pork shoulder slow-cooked in a delicious blend of apple cider, chicken broth, and aromatic herbs. With just a few simple steps, including searing the pork and braising it with sweet apples and onions, you'll create a comforting meal perfect for gatherings or cozy nights in. Ingredients
  

3 to 4 pounds pork shoulder (boneless)

Salt and black pepper (to taste)

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

2 cups apple cider (preferably unfiltered)

1 cup chicken broth

2 tablespoons apple cider vinegar

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary, minced (or 1 teaspoon dried rosemary)

2 apples, cored and sliced (preferably Granny Smith or Honeycrisp)

1 tablespoon brown sugar

1 bay leaf

Instructions
 

Preheat your oven to 300°F (150°C).

    Season the pork shoulder generously with salt and black pepper on all sides.

      In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Once hot, add the pork shoulder and sear it on all sides until golden brown (about 4-5 minutes per side). Remove the pork from the pot and set it aside.

        In the same pot, add the diced onion and garlic, sautéing until the onions are translucent (about 5 minutes).

          Pour in the apple cider, scraping the bottom of the pot to deglaze and lift any browned bits. Stir in the chicken broth, apple cider vinegar, thyme, rosemary, brown sugar, and bay leaf.

            Return the pork shoulder to the pot, pressing it down into the liquid. Nestle the sliced apples around the pork shoulder.

              Bring the liquid to a gentle simmer, then cover the pot with a lid and transfer it to the preheated oven.

                Braise the pork for 3 to 4 hours, or until it’s fork-tender and easy to shred. Check occasionally to make sure there is enough liquid; add more broth or cider if necessary.

                  Once done, carefully remove the pot from the oven. Let the pork rest for about 15 minutes before slicing or shredding.

                    Serve the braised pork shoulder with the apple and onion mixture drizzled over the top, and enjoy the delightful flavors of apple cider!
