4 large croissants (day-old or fresh)

1 cup almond paste

1/2 cup powdered sugar

1/4 cup unsalted butter, softened

1 teaspoon vanilla extract

1/4 teaspoon almond extract

1 egg (for egg wash)

1/4 cup sliced almonds (for topping)

Powdered sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a mixing bowl, combine the almond paste, powdered sugar, softened butter, vanilla extract, and almond extract. Use a hand mixer or spatula to blend until smooth and creamy.

      Carefully slice each croissant in half lengthwise, but not all the way through. You want to create a pocket for the filling.

        Generously spread the almond paste mixture inside each croissant, then close them gently.

          In a small bowl, beat the egg to create an egg wash. Brush the tops of each filled croissant with the egg wash to give them a lovely golden color as they bake.

            Place the croissants on a baking sheet lined with parchment paper and sprinkle the sliced almonds over the top.

              Bake in the preheated oven for about 15-20 minutes, or until they are golden brown and the almond filling is warm and slightly gooey.

                Once out of the oven, let them cool for a few minutes. Dust with powdered sugar before serving, if desired.
