Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 lime, juiced

2 teaspoons chili powder

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

8 small corn tortillas

1 cup shredded cabbage

1/2 cup diced tomatoes

1/4 cup fresh cilantro, chopped

1/2 avocado, sliced

Sour cream or Greek yogurt (optional, for serving)

Instructions

In a medium bowl, combine the olive oil, lime juice, chili powder, garlic powder, cumin, salt, and pepper. Add the shrimp and toss to coat well. Let marinate for about 10 minutes.

Preheat the grill to medium-high heat. If using wooden skewers, be sure to soak them in water for 30 minutes prior to grilling to prevent burning.

Thread the shrimp onto skewers (if using) and grill for 2-3 minutes on each side, or until the shrimp are opaque and cooked through.

While the shrimp is grilling, warm the corn tortillas on the grill for about 30 seconds on each side.

To assemble the tacos, place a portion of grilled shrimp on each tortilla. Top with shredded cabbage, diced tomatoes, fresh cilantro, and avocado slices. Add a dollop of sour cream or Greek yogurt if desired.

Serve immediately with extra lime wedges on the side.
