Ingredients

2 ripe bananas, mashed

1 cup all-purpose flour

1/2 cup rolled oats

1/4 cup sugar (brown sugar for extra flavor)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup milk (or a non-dairy alternative)

1 large egg

1 teaspoon vanilla extract

Vegetable oil (for frying)

Powdered sugar (for dusting)

Maple syrup (for serving)

Instructions

In a large mixing bowl, combine the mashed bananas with sugar, milk, egg, and vanilla extract. Whisk until smooth.

In another bowl, mix together the flour, rolled oats, baking powder, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; it’s okay if a few lumps remain.

Heat a skillet over medium heat and add enough vegetable oil to coat the bottom of the pan.

Once the oil is hot, drop spoonfuls of the batter onto the skillet, leaving space between each fritter as they will spread slightly.

Cook the fritters for about 3-4 minutes on one side, or until golden brown, then carefully flip and cook for another 3-4 minutes until cooked through.

Transfer the cooked fritters to a plate lined with paper towels to absorb excess oil. Keep warm while you cook the remaining batter.

Serve the fritters warm, dusted with powdered sugar and drizzled with maple syrup. Enjoy your delicious skillet banana fritters!
